Back of the Ute Breakfast - Bacon and egg burger
This is about as simple as it gets. Easy, reliable, and something you can cook on the back of the ute in the middle of nowhere. When you start with good quality ingredients, there’s no need to overthink it, less is more when it comes to sauces and flavours.
Ingredients:
Packet of bacon, I usually use streaky bacon
Milk bun or if you can’t find a milk bun, go for a brioche.
Free range eggs.
Your favourite mayo - we use a good Japanese mayo but you can use whatever you like.
Salt and freshly cracked pepper
Method:
Cook the bacon in a cast iron pan until crispy — or however you like it.
Give the pan a quick wipe to remove the excess bacon fat, then cook your eggs.
In a clean pan, use a little butter or even some mayo to lightly toast the buns.
Assemble as follows:
Spread mayo on the base of the bun.
Add at least two pieces of bacon.
Top with the cooked egg.
Finish with a sprinkle of salt and freshly cracked black pepper.
Enjoy with freshly made filtered coffee if you remembered to pack it.
